you're a bit 'too generic ... which scale ... period ... how accurate you want it ... usually the Tamiya are a good compromise, they are easy, fairly accurate, the plastic of good quality, not too expensive and easy to find anywhere ... depending on the subject if you do not do too much the rivet counter are "shake and bake" kits in general

On a serious note, I would say the Tamiya Hetzer. Its one of the fastest build Ive ever done.

Old Tamiya M1/M1A1 Abrams. If you build it out of box with no attempt to make corrections, it can be a weekend build.

-4 hours to build.
-4 hours for a quick sand/green paint job plus detail painting.
-4 hours for quickie weathering job

Mine came out "pig pink". I don't remember why, but I wanted it to have a British camo color. Learned from it, though. Gotta love the metal axles.

1/48th scale Aurora tank, anyone will do fine. It would take an hour to build if that hour included a lunch break.

Yes, this though I would also say the venerable and still very nice Tamiya M41 Walker Bulldog is a contender as well.

I would say anything Tamiya. You’ll get a nice clean build with pretty much any of their kits, especially the newer ones.

If you don't have an airbrush, Tamiya M41, or Tamiya PZII. with a can of krylon OD or something from Model master spray paint you can have a decent clean painted bulldog, and with a can of dark grey primer you can pass for panzergray on the PZII, esp if not using the Model master one.

A Sturmgeschutz III. Wheels, body and done.

No pesky turret, six road wheels per side. .

Even simpler is a Tamiya or Academy Hetzer. Four wheels per side.

The big slowdown on an armor kit is all the road wheels and turret stuff. Four wheels and a casement gun?

The old Trumpeter Strv-103. The kit is also inexpensive.

The fastest for me were PST 1/72 ISU-152. Less than 30 minutes. A 1/35 scale one has barely any more pieces. No rubber on road wheels so the suspension doesn't need any masking. Nothing simpler to paint and weather than Russian green.
